I'm the first to admit that my husband is the real chef in the apartment. It's uncommon to see me slicin' and dicin' in the kitchen. On nights when I'm not being a diva and having a Chris-made dinner, what do I eat? I'm so glad you've asked.
Roasted Veggie Medley
This meal is fantastic because 1. the ingredients are frozen and 2. just set it and forget it (until the timer goes off). Set the oven to 425 degrees and leave your veggies in for 15-25 minutes depending on how crispy you like 'em. I tend to roast a billion veggies (industry-approved form of measurement) and portion them out for the entire week.
Seasoning (cajun or Italian works really well)
1-8 tbsp of olive oil
Scrambled Egg Bowl
I know this is technically breakfast (is that cheating?), but breakfast for dinner is so dang easy that I can't not. I toss it all into a pan and scramble until it's cooked. Do you feel like a fabulous, all-knowing master chef yet?
3 slices of turkey bacon chopped
1/2 an avocado
Veggie Grilled Cheese
This is new in my repertoire, but let me say this is the bomb. I am emotionally attached to how good I find a good ole fashioned grilled cheese. Sautée your veggies in a pan, then make your grilled cheese. Just before you close your sandwich, add a teeny bit of the cooked vegetables. For a crispy grilled cheese, put mayo on the outside of your bread before you put it in the pan. My best friend told me about this and it's so0o0o good.
2 slices of wheat bread
2 slices of cheese
For all of these recipes, you can use leftover veggies as a side. I love a side, so this matters to me. Does anyone have any easy go-to dins that rocks their world? Share, share xx
